Alternate Cooking Method:

  1. Step 1

Heat large nonstick skillet over medium heat until hot. Add Ground Beef; cook 12 to 15 minutes, breaking into 1/2-inch crumbles and stirring occasionally.

Cooking Tip: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of ground beef doneness.

  2. Step 2

Transfer beef into 4-1/2 to 5-1/2-quart slow cooker; add all other ingredients. Cover and cook on HIGH 2 hours or LOW 4 hours until flavors are blended. Top soup with tortillas, cheese, avocado, sour cream and taco seasoning, as desired.

  3. Step 3

This recipe can be made in 5-quart stockpot on the stovetop. Heat stockpot over medium heat until hot. Add Ground Beef; cook 12 to 15 minutes, breaking into 1/2-inch crumbles, stirring occasionally. Add all other ingredients. Reduce heat to simmer; cook 20 to 25 minutes, stirring occasionally. Top with tortilla strips; sprinkle with cheese, avocado, sour cream and taco seasoning, as desired.

The Essential Ingredients

  • Ground Beef: Also called ‘hamburger,’ it’s made by grinding beef cuts and beef trim. It works well in dishes that require crumbles, and typically any leanness of Ground Beef works well in dishes – just be sure to drain any remaining fat after cooking.
  • Beef Broth: A savory liquid made from beef, beef bones, vegetables and seasonings. You’ll find many boxed or canned versions at the grocery store, including low sodium options). Use in place of water or other liquids to add a depth of flavor.
  • Enchilada Sauce: A rich savory sauce made from chili peppers, tomato, garlic, onions and spices. It adds bold flavor to enchiladas and many other Mexican-inspired dishes.
  • Kidney Beans: Large kidney shaped legumes commonly used in chilis, soups and stews. Also great to add to salads for a hearty boost of protein and fiber. You can find them in the grocery store both dry or canned.
  • Sweet Corn: Known for its natural sweetness, this corn adds a bright crunch to any dish. You can find it fresh on the cobb, canned, or frozen.
