Classic Texas Cheeseburger With Haystack Onions

Preparation

  1. Step 1

    In a large bowl, mix Ground Beef and seasonings and form into patties. This will make 12 ¼ lb. patties.

  2. Step 2

    Place patties into refrigerator to chill and become firm.

  3. Step 3

    Meanwhile, prepare grill with two-zone to MEDIUM-HIGH heat.

  4. Step 4

    Remove patties from refrigerator and season with salt and pepper or your favorite BBQ rub.

  5. Step 5

    Place patties on grill over medium, ash-covered coals. Grill, covered, 8 to 10 minutes (over medium heat on preheated gas grill, covered, 7 to 9 minutes) until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally.

    Cooking Tip: Cooking times are for fresh or thoroughly thawed ground beef. Color is not a reliable indicator of ground beef doneness.

  6. Step 6

    In the meantime, prepare the haystack onions. Combine milk and egg in a bowl. Slice onions thinly and put into egg wash to coat. Place onions in a colander to drain. Mix flour and seasonings in a flat pan. A 9x13 cake pan works well. Drop onions into flour and coat well. Slowly add onions to hot cooking oil. Cook in small batches, so they do not get oily. Remove from oil when golden brown and place on paper towels to drain.

  7. Step 7

    Place a cheese slice on each patty and close the grill allowing the cheese to melt.

  8. Step 8

    Remove from grill and allow to rest about five minutes.

Assembly

  1. Step 1

    Use condiments of choice and coat top and bottom bun.

  2. Step 2

    Place leaf lettuce on bottom bun.

  3. Step 3

    Add beef patties, lightly salt patty again if desired.

  4. Step 4

    Place tomato and pickles on top.

  5. Step 5

    Cover with haystack onions and cover with top bun.

Safe Handling Tips:

  • Wash hands with soap and water before cooking and always after touching raw meat.
  • Separate raw meat from other foods.
  • Wash all cutting boards, utensils, and dishes after touching raw meat.
  • Do not reuse marinades used on raw foods.
  • Wash all produce prior to use.
  • Cook steaks and roasts until temperature reaches 145°F for medium rare, as measured by a meat thermometer, allowing to rest for three minutes.
  • Cook Ground Beef to 160°F as measured by a meat thermometer.
  • Refrigerate leftovers promptly.
